1. Do they fit the 2021 Yukon Denali with retractable running boards - want to be extra sure. 2. Can the white "Denali" be blacked out? Prefer a more subtle look.

Yes these will fit the 2021 Yukon Denali. The lettering on the plate cannot changed. It is a polished stainless finish with a black vinyl overlay on the plate.
